DAY 1
Creamy Spinach and Tomato Pasta
MAIN DISH
Serves: 4
Prep Time: 10 Minutes
Cook Time: 15 Minutes
INGREDIENTS:
  • 5 ounces whole wheat pasta
  • 1 Tablespoon olive oil
  • 1/4 yellow onion chopped
  • 1 teaspoon minced garlic
  • 1 (6 ounce) can tomato paste
  • 1 1/5 cups water
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) package cream cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups spinach
  • Parmesan Cheese
DIRECTIONS:
  1. Cook noodles according to directions on package.
  2. While noodles are cooking, heat olive oil over medium heat.
  3. Add onion and garlic and saute until onions are tender (about 5 minutes).
  4. Add tomato paste and water and stir until combined.
  5. Add cream cheese and diced tomatoes, salt, and pepper. (The cream cheese will melt better if you cut it into smaller pieces before adding it in. Stir until all combined and creamy.)
  6. Turn stove top to low heat, add noodles and stir until coated.
  7. Add spinach and stir until spinach begins to wilt (about 3 minutes)
  8. Top with parmesan cheese and enjoy!
DAY 2
Smaller Family- Homemade Chicken Nuggets
MAIN DISH
Serves: 4
Prep Time: 15 Minutes
Cook Time: 15 Minutes
INGREDIENTS:
  • 3/4 pound boneless chicken breasts
  • 2 cups corn flakes
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • pinch of pepper
  • 2 eggs, beaten
  • 1/4 cup flour
DIRECTIONS:
  1. Preheat oven to 425 degrees.
  2. Cut chicken breasts into nugget-sized pieces. Set aside.
  3. Lightly spray cookie sheet with non-stick cooking spray.
  4. Put flakes in large plastic bag and crush to fine texture. Pour into medium-sized bowl. Add Parmesan cheese, salt, onion powder, garlic powder, and pepper to corn flakes.
  5. Place eggs in separate small bowl.
  6. Place flour in separate small bowl.
  7. To bread chicken, coat chicken piece in flour, shaking off excess. Dip in the egg, coat in corn flake mixture.
  8. Arrange chicken on prepared baking sheet til golden brown (about 12-15 minutes).
Chocolate Chip Cookie Ice Cream Cake
DESSERT
Serves: 8-10
Prep Time: 4 Hours
Cook Time: 40 Minutes
INGREDIENTS:
  • 1 (15.25 ounce) chocolate cake mix
  • 1/2 gallon chocolate chip cookie dough ice cream
  • 1 (13 ounce) bag chewy chocolate chip cookies
  • 2 1/4 cups semi-sweet chocolate chips
  • 3/4 cup unsalted butter
  • Wax paper
DIRECTIONS:
  1. Bake cake mix according to package directions for two 9 inch round cakes. Let cool, and remove from pans.
  2. Remove ice cream from the freezer and let it partially thaw (you don't want it to be melted, but it does need to be spreadable).
  3. On a freezer-safe plate, place one 9 inch cake. Measure a piece of wax paper, folded in half, to go around the circumference of the cake and secure in place with tape (this will help the cake keep it shape until you're ready to serve). On top of the cake, evenly spread ice cream to the edges, pressing it up against the wax paper.
  4. Crumble two-thirds of the package of cookies, and sprinkle evenly over the ice cream. Place the second 9 inch cake on top of the cookie crumbs, and press down gently (don't push too hard, or your wax paper may come undone).
  5. Freeze for 2-3 hours, until ice cream can hold it?s shape.
  6. Before serving, heat chocolate chips and butter in a saucepan over medium heat, stirring until smooth. Remove wax paper from the cake, then pour chocolate sauce over the top, letting it drip down the sides. Top cake with remaining chocolate chip cookies, and serve immediately.

Smaller Family- Slow Cooker Swiss Chicken Recipe
MAIN DISH
Serves: 4
Prep Time: 10 Minutes
Cook Time: 6 Hours
INGREDIENTS:
  • 4 boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/4 cup milk
  • 1 (6 ounce) package herb stuffing mix
  • 1/4 cup butter, melted
DIRECTIONS:
  1. Spray slow cooker with nonstick cooking spray.  Place chicken breasts on the bottom of the slow cooker. 
  2. Cover chicken with slices of Swiss cheese. 
  3. In a small bowl, combine cream of chicken soup and milk. Pour the mixture over chicken and cheese. 
  4. Sprinkle stuffing mix on top and drizzle butter over the top. 
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours.
Oven Roasted Broccoli and Cauliflower
SIDE DISH
Serves: 4
Prep Time: 5 Minutes
Cook Time: 20 Minutes
INGREDIENTS:
  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 4 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons minced garlic
DIRECTIONS:
  1. Preheat oven to 425 degrees F.
  2. Place broccoli and cauliflower florets in a large bowl. Pour olive oil over vegetables and toss until evenly coated.
  3. Add salt, pepper and minced garlic and mix until evenly distributed.
  4. Spread vegetables onto a baking sheet sprayed with nonstick cooking spray.
  5. Cook in oven for 15-20 minutes, or until vegetables are slightly brown and tender.
DAY 4
Homemade Pizza Pockets
MAIN DISH
Serves: 4
Prep Time: 10 Minutes
Cook Time: 15 Minutes
INGREDIENTS:
  • 12 frozen rhodes dinner rolls
  • 24 slices pepperoni
  • 2 cups shredded Mozzarella cheese
  • 1 cup pizza sauce
DIRECTIONS:
  1. Thaw rolls according to directions on the package.
  2. Preheat oven to 350 degrees.
  3. After the rolls are thawed (but not risen), stretch out each roll and lay it flat on a greased cookie sheet.
  4. Spoon a small amount of pizza sauce onto each roll. Top with a small handful of shredded cheese, and two pepperonis.
  5. Fold the dough over the toppings and pinch the edges together. Try to not have any holes in your dough, as your cheese will melt out of it.
  6. Bake for 15-20 minutes, or until golden brown. Let cool a few minutes before serving.
Blue Cheese Wedge Salad Recipe
SIDE DISH

INGREDIENTS:
  • 1 head iceberg lettuce (cut into four wedges)
  • 2 cups grape tomatoes (cut into halves)
  • 1 cup chopped red onion
  • 12 slices cooked bacon (crumbled)
  • 1 cup crumbled blue cheese
  • 1 cup pecan pieces (toasted)
  • Dressing:
  • 1 1/2 cups light mayonnaise
  • 1 1/2 cups buttermilk
  • 1 cup crumbled blue cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
DIRECTIONS:
  1. Place each lettuce wedge on a plate.  
  2. Top with grape tomato halves and onion.  
  3. Sprinkle crumbled bacon, blue cheese and toasted pecan pieces.  
  4. Mix together all dressing ingredients and drizzle on top of salad.

Parmesan Pork Chops
MAIN DISH
Serves: 4
Prep Time: 10 Minutes
Cook Time: 20 Minutes
INGREDIENTS:
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon seasoned salt
  • salt and pepper, to taste
  • 1/4 cup milk
  • 4 boneless pork chops
DIRECTIONS:
  1. Preheat oven to 375 degrees.
  2. Grease a 9 x 9" pan with cooking spray.
  3. In a small bowl, mix together bread crumbs, cheese, seasoned salt, and salt and pepper.
  4. Pour milk into a separate shallow bowl.
  5. Dredge each pork chop through the milk, and then through the crumb mixture, making sure each is completely coated.
  6. Place the pork chops in the prepared pan.
  7. Bake for 8-10 minutes on each side.

Smaller Family- Oven Baked Beef Tacos Recipe
MAIN DISH

INGREDIENTS:
  • 2 teaspoons olive oil
  • 1/2 medium onion (diced)
  • 1 1/2 teaspoons minced garlic
  • 3/4 pound lean ground beef
  • 1 (1 ounce) packet taco seasoning
  • 1 (15 ounce) can black beans (drained and rinsed)
  • 3/4 cup chunky salsa
  • 8 hard taco shells
  • 1 cup shredded cheddar cheese
DIRECTIONS:
  1. Preheat oven to 400 degrees F.
  2. In a large skillet, heat oil and add onion and garlic, saute for about 5 minutes until soft.
  3. Add beef and taco seasoning, cooking until meat is browned.
  4. Add beans and salsa.  Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.
  5. In a large 9x13 inch baking pan, line up all the taco shells.
  6. Fill each one with a couple of scoops of the beef mixture and pack down into the shell. Repeat until all the shells are filled.
  7. Top each taco with shredded cheese.
  8. Bake for 8-10 minutes, or until all the cheese is melted.
Disneyland Dole Whips
DESSERT
Serves: 3-4

INGREDIENTS:
  • 1 (16 oz) bag of frozen pineapple chunks (I used Dole)
  • 4 cups vanilla ice cream
  • 1 teaspoon lime juice
  • 1 teaspoon lemon juice
  • 12 ounces pineapple juice
DIRECTIONS:
  1. Puree frozen pineapple in a blender. It works best if it is about halfway thawed. To that, add the ice cream, lime juice, lemon juice, and half (6oz) of the pineapple juice. Blend together until it is well mixed.
  2. Freeze the mixture for about 2 hours to set up.
  3. Scoop into glasses or bowls and pour the remaining pineapple juice over each serving.
  4. We found it made about 3 servings, but you can easily double or cut the recipe in half. Dream of Disneyland and enjoy!
